Poppy Seed Ritz Chicken Casserole


4 CUPS COOKED AND CUBED SKINLESS BONELESS CHICKEN BREASTS

16 OZ. CONTAINER SOUR CREAM

2 CANS CREAM OF CHICKEN SOUP

2 CUPS SHREDDED CHEDDAR CHEESE

1- 2 CUPS STEAMED BROCCOLI (OPTIONAL)

2 CUBES BUTTER

4 ROLLS RITZ CRACKERS

2 T. POPPY SEEDS




Instructions: Combine Chicken, broccoli (opt.) sour cream, and cream of chicken soup in large bowl. In a separate bowl, combine Poppy seeds and gently crushed Ritz crackers. Add 2 cubes of melted butter and gently mix together. Combine half of the cracker mix with the chicken mix and pour into 9x13 (greased) glass baking dish. Cover with shredded cheese. Pour the remaining cracker mix on top to cover completely. Cover with tin foil and bake at 350 degrees for 40 minutes. Serve over rice.
