Manicotti with Cheese Stuffing

1/2 lb. mozzarella cheese diced or shredded
2 lbs cottage cheese well drained
2 eggs slightly beaten
1/2 c Parmesan cheese
2 T chopped parsley
1 t salt
1 t sugar
1/4 t. pepper

Cook 1 pkg. Manicotti shells (14) according to directions on package. (Be sure to rinse noodles in cold water and drain or they will stick together.) Stuff the shells with cheese mix. Place in shallow baking pan.

Meat Sauce:

Brown 1 lb. hamburger, drain excess fat.
1 pkg spaghetti mix.
1 T crushed basil
1 14 oz. can tomato suace
1 8 oz. can tomato paste
1 14 oz can water

Mix together and simmer stirring occationally for about 1/2 hour. Pour over the stuffed manicotti. Voer and bake @ 350 for a half hour.

(Sometimes if I'm being lazy, I'll just brown the hamburger and mix it with a jar of Prego spaghetti sauce.)
