Banana Bread


1 cup sugar

1/2 cup oil

2 eggs

1 cup (4 medium) ripe mashed bananas

1/2 cup sour cream

1 tsp vanilla

1 1/2 cup flour

1 tsp. baking soda

1/2 tsp. salt

1 cup chopped nuts or chocolate chips (opt.)



In a large bowl, beat sugar and oil. Add eggs, bananas, sour cream, and vanilla. Blend well. Add flour, baking soda, and salt; stir just until dry ingredients are moistened. Add 1 cup chopped nuts or chocolate chips if desired. Pour into a greased and floured loaf pan. Bake at 350 for 50-

60 minutes. cool in pan for 10 minutes. Remove and cool completely on wire rack. Makes 1 loaf.
