Pumpkin Pancakes

-Beat 2 eggs; stir in 3/4 C. pumpkin
-In a separate bowl mix 2 TBL sugar, 1/2 tsp each of cinnamon, nutmeg, ginger, baking soda and salt with 1 and 1/2 tsp baking powder and 1 and 1/2 C. flour and set aside
- Add 1/4 C. oil to the eggs and pumpkin and then combine dry ingredients. Stir in about 1 and 1/2 C. milk until desired consistency.

Apple Cider Syrup:
1 C. sugar, 2 TBL cornstarch, 2 C. apple juice and 2 TBL lemon juice
-Mix well and boil 1 minute.
