Bacon Fried Rice


6 cups Botan Japanese Calrose Sticky Rice

Rinse rice 3-4 times until water is no longer milky. Drain well.


Combine 6 cups rice and 6 cups water in rice cooker (if you are doing this in a regular pot, place rice in pot and fill water one knuckle above the rice.) Cook as directed.


Finely chop 1 lb.bacon & cook to a crisp. Remove bacon from grease and set aside.


Add 1 bag frozen mixed vegetables & 3 stalks chopped celery to bacon grease, cook on med. heat until barely tender, do not over cook. Set aside.


Scramble approx. 10 eggs and set aside.


Chop 1/2 Jalapeno & 3 stalks green onion, stir fry in pan with left over bacon grease, if there is not enough add 1-2 T. vegetable oil.


Mix 2 Fried Rice Seasoning packets as directed. (You can also subsitute 2 T. brown sugar and 2 T. soy sauce for 1 seasoning packet)


Add 1/2 cube butter & 2-3 T. vegetable oil to left over bacon grease in the WOK. Add cooked rice to the oil/butter mixture. Add fried rice seasoning mixture, bacon bits, and mixed vegetables to the rice. Add eggs very last. Mix well. Season with salt & pepper to taste.


Yield: Approx. 16-20 Servings
