Caramelized Green Beans

1 lb.+ fresh green beans
1/2lb. bacon
½ red onion, sliced thinly
3-4 cloves garlic, minced or pressed
2 Tbsp. sugar
2 Tbsp. soy sauce
½ tsp. Kosher salt
freshly-ground pepper

Chop raw bacon into a 1 inch dice. Begin frying the bacon in a large skillet. When cooked, remove bacon from pan and drain on a paper towel. Pour bacon drippings out of pan, reserving just about a tablespoon.

In a small bowl, prepare the sauce by mixing sugar, soy sauce, and salt.Cut onion in half and into very thin slices. Press garlic and set aside.

Rinse beans and trim off the ends. Place in a saute pan with a lid. Fill with 1-2 inches of water. Let water come to a boil and steam the beans just for a minute or two. You’ll want them very crisp.While the beans are cooking, return the bacon pan to the stove and heat up once again. Add onions and garlic and stir so they don't scorch. Cook for about a minute, until soft. Add blanched beans and stir fry 2-3 more minutes.Give your sauce a quick stir and then pour on top of the beans. Keep stir-frying until the beans become glazed. Do this for another 2 minutes. Add crumbled bacon and lots of freshly-ground pepper to the beans. Keep stir frying until the sauce sticks to the beans and the bacon. Transfer to a serving dish and allow to stand a few minutes so the beans cool down a bit and the glaze thickens up a little.
