Grandma Flora’s Fudge

aka: Snow Fudge

4 c. sugar

4 heaping tsp. cocoa

2 1/2 c. half and half or whipping cream (or some of both)

1 Tbl butter

1Tbl karo syrup

1 tsp vanilla

Directions:  Mix 4c. sugar and 4 heaping tsp  cocoa together then add half and half or whipping cream.  Stir consistently until sugar dissolves and starts  to boil. Then stir as little as possible until at medium ball stage.

Once at medium ball stage drop in the middle of pan 1 Tbl karo syrup and 1 Tbl butter ** don’t stir these in, just drop them in the  middle of the fudge mixture and let it sit until cooled***

Put pan outside or in freezer until completely cooled.

Then stir fudge until it loses it’s luster (turns lighter and loses it’s shine and hardens) **This will take approx 30 min or more. Then stir in 1 tsp vanilla. Drop into balls or put in 13 x9 pan. Refrigerate those you don’t eat.

Tips: You can use a kitchen aid mixer to stir it if you don’t want to do it the old fashion way.  If the fudge doesn’t harden you can also use it as a frosting …which is AMAZING!
