Twice Baked Potatoes


4 medium potatoes, baked

1 C. cottage cheese (opt.)

1/2 C. low fat milk

1 T. onion, minced

Paprika and Dried Parsley flakes

Cut hot potatoes lengthwise, scoop out pulp leaving skins intact stuffing. Mash potatoes with cheese, add milk and onion. Spoon mixture back into skins. Sprinkle with paprika and parsley.

I like to put a strip of cheddar cheese on top of potatoes. Place on baking sheet, put in oven bake for 10 minutes or until potatoes are golden. Serve hot.
