Corn Bread


1 C. corn meal

1 C. flour (I use whole-wheat & it tastes really good)

2 Tbsp. sugar (optional--I don't use it)

1 Tbsp. baking powder

1 tsp. salt

1/3 C. oil (I do 1/2 unsweetened applesauce)

1 egg

1 C. milk



Mix until just blended. Pour into a greased 8x8 pan that has @ 2 Tbsp. melted butter in the bottom. Bake at 400 degrees for approximately 20-25 minutes.
