Crust:
1 C. butter, softened
2 C. flour
1/2 C. powdered sugar
Filling:
4 eggs, beaten
1/4 C. flour, sifted
2 C. sugar
6 Tbsp. lemon juice
Mix crust ingredients & press into the bottom of a greased 9x13 pan. Bake at 350 degrees for 12-15 minutes. While the crust is baking, mix ingredients together for the filling. Pour filling over crust and bake for another 25 minutes (I use the toothpick method & it didn't come out quite clean, but the lemon bars were perfect, so be careful not to over-bake). Let bars cool completely & then sprinkle with powdered sugar & cut & serve.
