America's Test Kitchen Chocolate Chip Toffee- Flavored Cookies


14 Tbsp butter total (not margarine), melt 10 Tblsp in a skillet (not microwave) stirring until it actually turns a brown color but not burnt. Browning brings out a much richer flavor. Pour the hot melted butter into a mixing bowl and wisk in the remaining 4Tblsp (nonmelted) butter so that it melts with the rest.

Add to melted butter:
1/2 cup white and 3/4 cup brown sugar (they highly recommend dark brn sugar which enhances the “toffee” flavor and richness of the dough)
1 tsp salt
2 tsp vanilla extract.
1 egg AND 1 egg yoke. Wisk in until smooth. Let sit for 3 minutes, wisk, wait 3 min, wisk, wait 3 min wisk. (this allows the sugar to dissolve into the butter to make it creamy and not grainy,).

Then add:
 1 3/4 cup flour and 1/2 tsp baking soda.   (mix flour and soda together)  then add 1 cup choc chips  (ghirdadelli bittersweet is what they recommend).

Make fairly large cookies. 3Tbs dough. Only about 8 cookies on a  sheet in a  2-1-2-1-2 arrangement because they spread a lot.  Bake 375 for 11-14 min. Don’t overcook. Makes about 18ish cookies
