Italian Turkey Meatloaf

INGREDIENTS

  • • 1/2 cups onions, diced
  • • 2 Tbsp fat free chicken broth, low sodium
  • • 2 Tbsp garlic, minced
  • • 1 1/2 lbs ground turkey breast
  • • 1/2 cup bread crumbs or oatmeal
  • • 1/2 cup marinara sauce
  • • 2 Tbsp marinara sauce
  • • 2 Tbsp basil, chopped
  • • 2 Tbsp italian parsley, chopped
  • • 1/2 egg, beaten

DIRECTIONS

    1) Preheat oven to 350.

    2) Saute the onions in the broth until lightly browned. ( I just put mine in raw)

    3) Add the garlic and cook 5 more minutes, remove from heat and cool slightly. (same here, put in raw)

    4) In a large mixing bowl, combine the onion mixture with the ground turkey, bread crumbs, 1/2 cup marinara sauce, basil and parsley.

    5) Form mixture into a loaf. Shape and place in an ungreased loaf pan.

    6) Brush with the remaining 2 tbs marinara sauce and bake until cooked through, 30 - 45 minutes.

    7) Drain off fat and let cool 20 minutes before cutting into 8 slices.
