French Toast Roll Ups

1. Cut all the crust off of your bread.

*Any type of white bread will work.

I always buy whatever is cheapest.

Don't buy wheat.  They don't turn out as good.

*When doubling this recipe {which you should always do for a large crowd!} buy 2 loaves

2. Using a rolling pin, roll each piece of bread flat, like a pancake.

3. Mix together 1 egg yolk, 1- 8oz. pkg. of cream cheese softened, and 1/2 cup sugar. Blend thoroughly.

4. Spread cream cheese mixture over each piece of flattened  bread as thin or thick as you would like.

5. Roll each piece of bread up.

6.Melt 5 T. butter

7. Mix together 1/2 cup sugar and 1 T. Cinnamon

8. Brush the rolls with butter and dip completely in cinnamon/sugar mixture.

9. Bake at 400 degrees for 10-12 minutes.

* These are especially great because you can make them up the night ahead.

Just place in the refrigerator covered with tin foil until you're ready to bake!
