Pistachio Nut Bread

1 Yellow Cake Mix 

1 small pkg. Pistachio pudding

4 eggs + 2 Tbls water
1 C Sour Cream - (can sub w/ Greek yogurt)
1/2 C ground pistachio nuts - Optional
1/4 C veg or canola oil
Butter and Cinnamon Sugar (to coat the pan and coat the top)
2 bread loaf pans  
Mix ALL ingredients (except for Butter and Cinnamon Sugar) together in a bowl and blend well and set aside.
This makes enough for two loaves so butter two bread pans thoroughly so that no pan is showing through. Pour in a good amount of Cinnamon Sugar and roll it around the pan to coat all sides to create a thick crust.
