Keto Quiche with Bacon & Cheese









  • 6 eggs
  •  cup heavy whipping cream
  • 6 pieces of bacon cooked and crumbled
  • 1 ½ cup Colby Jack Cheese, grated
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp bacon grease reserved from cooking the bacon (optional to grease skillet)

Instructions

  • Preheat oven to 350 degrees. Fry 6 pieces of bacon and reserve 1 tbsp of bacon grease to grease the 10.25 inch cast iron skillet.
  • In a bowl, crack 6 eggs, then add 4 pieces of crumbled bacon, ⅔ cup heavy whipping cream, 1 cup of the cheese, and salt/pepper.
  • Whisk well to incorporate air into the egg mixture to make it light and fluffy. You can also an immersion blender.
  • Grease cast iron skillet if needed. I one tbsp bacon grease reserved from cooking the bacon. Pour egg mixture into cast iron skilletBake for 19 minutes, then remove from oven and sprinkle 1/2 cup of cheese and 2 pieces of crumbled bacon on top. 
  • Place in oven on top rack for 1-2 more minutes until the cheese begins to melt.
