Simple Syrup
Ingredients:
1 cup water
1 cup sugar
1/2 cup fresh lime juice (about 5-6 limes)
1 Tbsp lime zest
Directions:
Zest the limes until you have 1 Tbsp and set it aside
Juice the limes until you have 1/2 cup and set it aside
Add the water and sugar to a small saucepan and cook over medium heat, whisking until all of the sugar has dissolved (don’t let it get to a boiling point). This takes about 4-5 minutes
Remove the saucepan from the heat and stir in the lime juice and zest
Let the mixture steep for one hour (you can do longer if you want a stronger lime flavor)Strain the mixture to remove the lime zestStore your syrup in the fridge in a glass mason jar or container until you’re ready to use itThis makes about 2 cups of syrup and will store in the refrigerator for up to 3 months.
Lime Mojito Mocktail- 10-15 mint leaves
- 2 tbsp lime juice
- 2 tbsp simple syrup
- 10 oz sparkling water or sprite
- ice
- lime slices
INSTRUCTIONS
- Place mint leaves and lime juice in a glass and muddle them together for 1 minute.10 mint leaves,2 tbsp lime juice
- Add 2 tbsp of the simple syrup.
- Add the sparkling water.10 oz sparkling water
- Garnish with lime slices, a sprig of mint, and/or fresh fruit.lime slices
NOTES
- Recipe makes 1-2 servings depending on how sweet you’d like it to be.
- For a lighter version, divide between 2 glasses, using 8-10 oz of sparkling water each.
- For a sweeter, more intense version, place ingredients in 1 glass and use 10 oz of sparkling water or sprite.
